I was with such a couple yesterday and we have taken them on as a gardening client because they're now having to move back to the UK.

Usually the first clue is British registered cars running around off season. Vans are even more obvious.
The local mayor here once told me that they do know who is legit and who is not and will perhaps have a purge after the end of the year. But doubtless départements will vary.
What irritates them more, he said is those who work on the black. If French unemployment increases there may be a spate of folk being reported but I guess if it stays amongst expats and if there are no obvious vehicles present then it should be ok. Those doing major conversion or visible repair work are the most obvious targets which is what happened in the Vendée.

I get so angry about UK cars with no CT/MOT that are uninsured and often driven by pillocks (and pilockesses) that if Brexit manages to force all these idiots to go back to the UK I will be happy. May they gorge themselves on baked beans and rot there.
