Fish fingers, fish cakes chips and sauté potatoes. We are off for a few days work tomorrow and the freezer is being switched off. So its a sort of food clearance.

We did pass a fish restaurant on holiday,they had a sign that said the chef would make you whatever you wanted. Not sure if the would have had fish fingers though 8-)

Big batch of chocolates.

I make up a big bowl of chopped dried fruit, semi dried apricots, a mix of different glacé fruit, praline, and sweet coconut. I then add in brandy and contreau. Mix well. I put small amounts into several silicone moulds. I then melt dark Vahlorona (wrong spelling, i know) and put the melted chocolate on the fruit and nut mix, pushing the chocolate down into the fruit.
When it’s set I chop it up into small pieces and keep in the fridge. It’s very popular!

I also have a glut of courgettes so I make a form of courgette fritters.

Grated courgettes, chopped garlic, chopped sun dried tomatoes, feta, Parmesan, mozzarella. Plenty of herbs, fresh and dried. Add in eggs, cream and yoghurt. Cook in silicone moulds. They’re very moorish and freeze really well after cooking. If I forget to squeeze out the courgettes ( which I often do) I add a little flour and cornflour!.

He'd have called them goujons :D

We are back home for a day so went to Lidals for the basics to conjure up a Gourmont meal.
The store was pretty cleared put so ended up with lemon sole again with cheesy rice.

Lamb tajine.
Shoulder of lamb, sliced carrots and courgettes, dried apricots and blanched almonds - a little raz el hanout and coriander.
I'm cheating, cooking it in the pressure cooker, as I haven't got a tajine pot big enough.
