As regards Inheritance tax can’t you nominate to a Notaire that you wish for your will to be executed under English law?
I have always told my children not to disrupt the enjoyment of their lives by looking after me.

I wasn’t suggesting what you do with your money. You said that inheritance tax was a reason for returning to U.K. hence my post

We would want everything to go to them or any grandchildren that we may have in the future, ultimately Brexit has forced us to completely re-think where we live for the rest of our lives and that was something that wasn't on the cards when we moved here in 2005.

My stepchildren are French tax residents so anything I end up leaving them is taxed at 60% after an individual allowance of 1500 euros, even if I die first the allowance only increases to 100K per child after which they pay up to 45% in IHT. There are few options open to us - accept the IHT situation and leave them a lot less than planned or move back to the UK which would mean next to zero IHT.
